  • The Beauty: Two fried eggs, sunny-side up, perched on crispy tortillas. Melted cheese oozing everywhere. Covered in this crazy red salsa ranchera sauce. Pink pickled onions on top for color. Refried beans and Mexican rice on the side. Bright. Colorful. Mouth already watering.

Started eating. Fork went CRUNCH through the fried tortilla under the egg. Yolk burst everywhere, mixing with the warm, slightly spicy salsa and cheese. Tasted savory, tangy, rich, comforting all at once – a total mouth party. Beans were creamy and earthy. The rice had tiny flecks of veggies.
