Alright, so you wanna make somethin’ like that Dave’s Killer Bread, huh? That fancy bread they sell at the store? Well, I ain’t no fancy baker, but I can tell ya how to make somethin’ close. It ain’t gonna be perfect, mind you, but it’ll be good, real good. And it’ll fill ya up, that’s for sure.

First off, you gotta get your stuff together. You know, the flour and all that. Now, Dave, he uses all that organic this and organic that, but I just use regular stuff from the store. Ain’t nothin’ wrong with that, I tell ya. So, get yourself some whole wheat flour, the kind that looks kinda brown and rough. That’s the good stuff. And you’ll need some of that white flour too, just a little bit to make it softer.

Okay, now for the wet stuff. You need some warm water. Not hot, not cold, just warm like baby’s bathwater, you know? And then you gotta add some yeast. Yeast, that’s what makes the bread rise. You can get that in little packets at the store. Just dump a couple of spoonfuls in the water with a little bit of honey. Honey, that’s for the yeast to eat, makes ‘em happy and bubbly. Let it sit for a bit, ’til it gets all foamy. That’s how you know it’s alive and ready to work.

Ingredients:

  • Warm water – about two cups, maybe a little more
  • Yeast – a couple of them spoonfuls from the packet
  • Honey – a little bit for the yeast, and then some more later
  • Oil – just a little, like maybe two big spoonfuls
  • Molasses – that’s that thick, dark syrupy stuff, gives it a good color and flavor
  • Salt – gotta have salt, bread tastes like nothin’ without it
  • Wheat gluten – this stuff makes the bread chewy, you can find it at the store with the fancy flours
  • Whole wheat flour – a whole bunch, like three or four cups
  • White flour – just a little bit, maybe half a cup

Now, once that yeast is all foamy, you gotta mix everything together. Get a big bowl, dump in the flour, the gluten, the salt. Then pour in the yeast water, the oil, the molasses and some more honey. Mix it all up good. It’s gonna be sticky, real sticky. Don’t worry about it, just keep mixin’. You gotta work it, you know? Like you’re kneadin’ dough for biscuits, but this takes longer. Knead it for a good ten, fifteen minutes, ‘til it gets smooth and stretchy. If it’s too sticky, add a little bit more flour, but not too much. You don’t want it dry and crumbly.

Once it’s all mixed up and kneaded, put it in a greased bowl, cover it up with a cloth and let it rise. Put it someplace warm, like near the stove, but not too hot. Let it sit for an hour or two, ‘til it doubles in size. That’s the yeast doin’ its work, makin’ the bread all light and fluffy.

After it’s risen, you gotta punch it down. Yeah, just punch it right in the middle. Get all that air out. Then you gotta shape it into a loaf. Just roll it out and tuck the ends under. Put it in a bread pan, cover it up again, and let it rise again for another hour or so.

Now, for the bakin’. Preheat your oven to, I don’t know, maybe 350 degrees? That’s what I use for most things. Put the bread in the oven and bake it for, I guess, 45 minutes to an hour. You gotta keep an eye on it, though. Every oven is different, you know? When it’s done, it’ll be all brown and crusty, and it’ll sound hollow when you tap it.

Take it out of the oven, let it cool down before you slice it. And there ya go! Homemade bread, just like…well, almost like that fancy Dave’s Killer Bread. It ain’t gonna be exactly the same, but it’ll be good, honest bread. And you made it yourself, with your own two hands. That’s somethin’ to be proud of.

They say Dave, that fella who makes the bread, he used to be in trouble with the law, but he turned his life around. Good for him, I say. Everyone deserves a second chance. And this bread, it’s kinda like that. Simple ingredients, turned into somethin’ good. Just like life, I guess.

So, there you have it. My version of that fancy bread. It ain’t perfect, but it’s made with love, and that’s what really matters, right? Now go on and bake yourself some bread.
