So today I figured I’d tackle that cabbage soup everyone keeps raving about online. The “Rivers Edge” thing sounded fancy, but the recipe promised simple stuff anyone probably has lying around. Good for an empty fridge kinda day, right? Grabbed my biggest pot because soup always ends up filling it more than you think.

Digging Through the Pantry
First step was rounding everything up. Didn’t need a special trip, thankfully:
- Chopped half a green cabbage roughly. Just hacked it up, nothing fancy.
- Dug out two sad-looking carrots from the crisper drawer, peeled ’em, chopped into coins.
- Found an onion hiding at the back. Got teary-eyed chopping that bad boy.
- Found a couple stalks of celery, sliced them up thin.
- Cracked open a huge can of whole tomatoes I’d forgotten about, squished ’em up right in my hands over the pot – messy, but kinda fun.
- Poured in a whole carton of vegetable broth, then added enough water to just about cover all the chopped stuff.
- Dusted off the garlic powder and onion powder jars for a good shake over the pot.
- Saw the bay leaves sitting there. Tossed in two.
- Last, spotted the dried thyme hiding behind the paprika. Pinched in maybe a teaspoon?
Getting Things Simmering
Slapped the lid on the pot, cranked the heat to get things rolling. Once it started bubbling like crazy, turned it way down to just a gentle burble. Set a timer for about 45 minutes and wandered off.
Came back later, lid covered in steam. Poked a carrot piece – yeah, nice and soft. Added salt and pepper. Felt like it needed a little tang? Drizzled in maybe half a glug of apple cider vinegar. Fished out the bay leaves – they look gross after cooking!
The Final Taste Test
Ladled out a steaming bowl. Honest truth? Looked kinda bland floating there. That cabbage smell filled the kitchen though. Took a cautious sip… damn. Seriously? That quiet? Those simple powders and the thyme just… worked somehow. The broth wasn’t watery like I feared. Tangy from the tomatoes and vinegar punch, sweet from the carrots and cabbage. Veggies held up but were perfectly tender. Really surprised how deep that flavor got from such basic junk. Tasted even better on day two after everything got cozy. Froze a couple containers too. Win for cheap eats. Definitely making this again when the fridge looks bare.
