You know how sometimes you just need a cookie? Not just any cookie, but something extra. That was me today. And my brain just screamed: chocolate chip marshmallow cookies. Had to be done.

So, I raided the pantry. Got out the usual lineup:
- Flour, check.
- Butter, softened, check.
- Sugars, both brown and white, because you need both for that chew, check.
- Eggs, vanilla, the basics.
- And of course, a big bag of chocolate chips and a bag of mini marshmallows.
Figured I had everything. Almost forgot the baking soda, classic me. That would have been a disaster – flat, sad cookies.
Diving into the Cookie Action
Alright, so I started creaming the butter and sugars. You know the drill. Got it all light and fluffy. Then in went the eggs, one by one, and a splash of vanilla. Mixed in the dry ingredients – flour, baking soda, pinch of salt. Standard cookie procedure, nothing too wild there.
Then came the stars of the show: the chocolate chips and the marshmallows. Now, marshmallows can be tricky little things in cookies. They can melt into nothing or turn into sticky, chewy landmines if you’re not careful. I decided to fold them in gently at the very end. Gently is the key word here. Didn’t want to crush all the air out of the dough I’d just built up.
Scooped them onto the baking sheet. I tried to make sure the marshmallows weren’t too exposed on the tops, hoping to prevent them from burning to a crisp. Popped the first tray into the oven. The smell, oh man, the smell started filling the kitchen. Pure bliss.
First batch came out. Okay, so some of the marshmallows that were peeking out got super golden, almost too golden on a couple. And a few melted out and created these crispy, lacy edges. Not bad, actually, kind of liked that bit, but I knew for the next batch I’d be a bit more careful tucking them in.

The next few trays? Pretty much perfection, if I do say so myself. The cookies spread just right. They were golden brown, packed with melty chocolate, and those little pockets of gooey marshmallow were just incredible. The trick really was to half-bury those marshmallows.
Let me tell you, biting into one of these fresh from the oven, when the chocolate is still molten and the marshmallow stretches… it’s a moment. A real good moment.
So yeah, that was my cookie adventure for the day. A bit of trial and error with the mallows, but totally worth it. Now I’ve got a whole tin of these bad boys. Not sure how long they’ll last, though. They’re dangerously good.
