Chicken cabbage casserole, a budget friendly meal for your family dinner

Okay, so the other day I was staring into my fridge, wondering what to cook, and I saw some leftover chicken and a big head of cabbage. I thought, why not try making a casserole? I’d never done a chicken cabbage casserole before, but I’ve made other casseroles, so I figured it couldn’t be that hard. Plus, I love a good comfort food dish, and this seemed like it would fit the bill.

Chicken cabbage casserole, a budget friendly meal for your family dinner

First, I grabbed the chicken and shredded it up. It was already cooked from a roast chicken I’d made earlier in the week, which saved me some time. Then, I chopped up the cabbage into bite-sized pieces. I also diced an onion and a couple of cloves of garlic because, let’s be real, onion and garlic make everything better.

I heated some olive oil in a big pan and sautéed the onion and garlic until they were soft and fragrant. Next, I threw in the cabbage and cooked it down until it was wilted and tender. I seasoned everything with salt, pepper, and a bit of paprika for a little kick.

  • Shredded cooked chicken
  • Chopped cabbage
  • Diced onion
  • Minced garlic
  • Olive oil
  • Salt
  • Pepper
  • Paprika
  • Shredded mozzarella cheese

Once the cabbage mixture was ready, I mixed it with the shredded chicken in a large bowl. Then, I greased a casserole dish and spread half of the chicken and cabbage mixture in the bottom. I sprinkled a generous layer of shredded mozzarella cheese on top because, well, cheese is life.

I repeated the layers – chicken and cabbage, then more cheese – and popped the whole thing in the oven at 375°F. I let it bake for about 25 minutes until the cheese was all melted and bubbly, and the casserole was heated through.

The Result

When I pulled it out of the oven, it smelled amazing! The cheese was golden brown and gooey, and the cabbage was tender. I let it cool for a few minutes, then dug in. It was so good! Creamy, cheesy, and with a little bit of sweetness from the cabbage. It was a total comfort food win. And you know what? My family loved it too! Even my picky eater kids asked for seconds. So, yeah, I’ll definitely be making this chicken cabbage casserole again. It’s a great way to use up leftover chicken, and it’s just a really satisfying and delicious meal. I’m so glad I decided to give it a try!
