Collard Green Casserole: Tips & Tricks (Make It Perfect Every Time)

Today, I really wanted to get down to business in the kitchen and whip up something hearty, something that really sticks to your ribs. I decided to go with a collard green casserole. Sounds pretty good, right?

Collard Green Casserole: Tips & Tricks (Make It Perfect Every Time)

So, I gathered all my ingredients first. I grabbed a bunch of fresh collard greens from the fridge, making sure they were nice and crisp. I also got some garlic, because what’s a good dish without garlic? I sliced it up real thin, like little leaves. Oh, and I found this smoked salt that I’ve been dying to try, so I grabbed that too. Vinegar was also on my list, and of course, some water.

Next, I washed the collard greens thoroughly, shaking off the excess water. I combined them in my medium Dutch oven, a real workhorse in my kitchen. I poured in about 3 cups of water, added the vinegar, and tossed in the sliced garlic.

I sprinkled in some of that smoked salt and got the pot on the stove, cranking up the heat to high. I cooked it for a bit, then deglazed the pan a few times with some warm sherry I had. I really like that nutty taste it gives.

Now, I like my greens a bit more tender, so I added some more water, about 3 cups again, and seasoned with a bit more salt. I brought it all to a boil and let it cook for about an hour, just letting all those flavors meld together.

  • Washed collard greens
  • Sliced garlic thinly
  • Combined ingredients in Dutch oven
  • Deglazed with sherry
  • Boiled for an hour

The whole house started to smell amazing, and I couldn’t wait to dig in. After an hour, I turned off the heat and let it sit for a bit. Then, I served it up, and let me tell you, it was just what I needed. Hearty, flavorful, and just downright delicious. This collard green casserole is definitely going into my regular rotation. Give it a try. It’s easy, it’s tasty, and it’s a great way to get your greens in!
