Alright, let’s talk about cookin’ up some chicken and yellow rice, the kind that fills your belly and makes everyone happy. I ain’t no fancy chef, mind you, just an old woman who knows her way around the kitchen. This ain’t gonna be one of them complicated recipes, just good, plain eatin’.

First off, you gotta get yourself some chicken. Now, you can use any kind, but I like them thighs. They got more flavor, you know? Bone-in or boneless, it don’t matter much, just make sure they’re good and clean. You can use breasts too, if that’s what you got. I seen folks usin’ all sorts, even that shredded stuff from the store.

Next up is the rice. We’re makin’ yellow rice, so get yourself a bag or box that says “yellow rice.” Don’t go gettin’ that plain white stuff, it won’t taste the same. Some folks like to add their own spices to make it yellow, but I say, why bother when you can buy it ready-made? Saves you time, and time is precious when you got a hungry family waitin’.

  • Get a big pan, the kind you can put in the oven if you’re bakin’ it, or a big pot if you’re doin’ it on the stove.
  • Put a little oil in the pan, just enough to coat the bottom. Don’t need much, chicken’s got its own fat.
  • Season that chicken good. Salt, pepper, garlic powder, onion powder, whatever you like. I like to use a little paprika for color and a bit of a kick. Don’t be shy with the seasoning, that’s where the flavor comes from.

Now, if you’re bakin’ it, just put the chicken in the pan and sprinkle the rice around it. Add some water or chicken broth, the box will tell you how much. Cover it up tight with foil and bake it ’til the chicken’s cooked through and the rice is tender. Usually takes about an hour, maybe a little more, depending on your oven. Remember, chicken needs to be cooked all the way through, you don’t want nobody gettin’ sick.

If you’re doin’ it on the stove, you gotta brown that chicken first. Get that pan nice and hot, then put the chicken in and let it cook for a few minutes on each side, just ’til it gets a little brown. Then, take the chicken out, add the rice and water to the pan, and bring it to a boil. Once it’s boilin’, turn the heat down low, put the chicken back in, cover it up, and let it simmer ’til everything’s cooked. Again, make sure that chicken is cooked all the way through.

Now, some folks like to add all sorts of things to their chicken and rice. I seen people put in vegetables, like onions and peppers, or even some beans. That’s all fine and good, but I like to keep it simple. Chicken and rice, that’s all you need. Maybe a little side of greens, if you’re feelin’ fancy. But honestly, this dish is good enough on its own.

And don’t forget the gravy! If you baked your chicken, you’ll have some nice juices in the bottom of the pan. Just mix a little flour and water together, pour it in, and stir it up ’til it thickens. If you cooked it on the stove, you might not have as much juice, but you can still make a quick gravy with some butter, flour, and chicken broth. Gravy makes everything better, you know? It’s like the icing on the cake, only for chicken.

This chicken and yellow rice is good for any time of day. You can have it for lunch, you can have it for dinner. It’s a good, hearty meal that’ll keep you goin’. And it’s easy to make, even if you ain’t much of a cook. Just follow these simple steps, and you’ll have a delicious meal that everyone will love. And the best part?
