Craving Comfort Food? Try This Simple Hamburger Corn Casserole

Alright, let’s talk about this hamburger corn casserole thing. I ain’t no fancy cook, ya know? I just make food that fills ya up and tastes good. This here casserole, it’s somethin’ my family’s been eatin’ for ages. It ain’t pretty, but it sure is tasty.

First off, you gotta get yourself some ground beef. Don’t go buyin’ that fancy, expensive stuff. Just get the regular kind. Brown it up in a big pan, ya hear? Drain off all that greasy stuff, nobody wants that. While that’s cookin’, you can get the rest of the stuff ready.

Now, for the corn part. You can use canned corn, that’s what I usually do. It’s easy and cheap. But if you got some fresh corn, well, that’s even better. Just cut it off the cob and throw it in. Makes it taste real sweet and summery, like when the corn’s growin’ tall in the field.

Then comes the cornbread mix. Yeah, I said mix. I ain’t got time to be makin’ cornbread from scratch. Just follow the directions on the box, easy peasy. Mix it up with some milk and eggs, just like it says. Nothin’ fancy, I told ya.

  • Ground beef – browned and drained
  • Corn – canned or fresh
  • Cornbread mix – made according to package directions
  • Maybe some cheese if you’re feelin’ fancy
  • A little onion, chopped up fine
  • Some salt and pepper, gotta have that

Once the beef is browned and the cornbread mix is ready, it’s time to put it all together. I just dump it all in a big ol’ casserole dish. Beef goes in first, then the corn, then pour that cornbread mix all over the top. If you want, you can sprinkle some cheese on top. Makes it look a little nicer, ya know? And who don’t like cheese?

Then, stick it in the oven. I usually put it in at 350 degrees, for about 30 or 40 minutes. You gotta watch it though, make sure it don’t burn. You’ll know it’s done when the top is golden brown and the cornbread is cooked through. Stick a fork in it, if it comes out clean, it’s ready.

This hamburger corn casserole, it ain’t nothin’ special, but it’s good, honest food. It’s the kind of thing you can make on a weeknight when you don’t feel like fussin’ around in the kitchen. It’s the kind of thing that fills ya up and makes ya feel warm inside. And that’s all that matters, ain’t it?

My grandkids, they love this stuff. They come runnin’ when they smell it cookin’. And my husband, well, he ain’t complained yet, so I guess he likes it too. It’s just one of them dishes that everyone enjoys. It’s comfort food, that’s what it is. It reminds me of home, of family, of sittin’ around the table together, sharin’ a meal.

Sometimes, I add a little onion to it, chopped up real fine. Gives it a little extra flavor. And sometimes, I put in a can of creamed corn, just to make it extra creamy. You can play around with it, add whatever you like. That’s the beauty of it, you can make it your own. Just don’t forget the salt and pepper, gotta have that. Otherwise, it’ll taste like nothin’.

So, there ya have it. Hamburger corn casserole. It ain’t fancy, but it’s good. It’s easy to make, and it feeds a crowd. And that’s all a body can ask for, ain’t it? Now, go on and make yourself some. You won’t regret it.

And if you got some leftover cornbread you don’t wanna waist, just crumble it up and add it in. Don’t let good food go to waste , that what my momma use to say. Food ain’t cheap these days, you got to use what you got. So go ahead and make it and try it with your family. They will love it I’m sure. It’s a good dish and it fills the belly.

And don’t forget about the pepper, it give it a little “zing”, that what my husband says. Just don’t put too much, or your gonna be running for water. Just a little bit, just enough to make it taste good, you know what I mean. And if you really want to get fancy, you can add some sour cream on top after it’s done cooking, just a dollop, not too much. That just makes it a bit more creamy and a bit more rich. But you don’t have to, it’s good just the way it is, believe me.

So now, get going, go to the store, get your stuff and get cooking. Don’t wait, go make this dinner for your family and have a good time. That all there is to it. It ain’t hard, just follow my directions and it will turn out good, I promise.
