Last weekend I made lasagna again. It always fills me up but leaves me wanting something sweet right after. So I set out to find stupid-easy desserts that wouldn’t require fancy ingredients or hours in the kitchen. Grabbed my laptop and searched for “quick desserts after lasagna.”

The Simple Plan

Found three ideas that seemed doable with stuff I already had:

  • Berry yogurt mess
  • Microwave mug brownie
  • Banana “ice cream”

Went to check my pantry – flour, sugar, cocoa powder? Check. Frozen berries in the freezer? Check. Brown bananas on the counter? Perfect.

Attempting the Berry Mess

Pulled out a bowl and dumped in plain yogurt. Spooned frozen berries straight from the bag into the bowl – saved myself washing a cutting board. Crushed some crackers over it because I didn’t have granola. Mixed it all together with honey. Took literally three minutes. Tasted tangy and sweet with crunchy bits. Winner!

Mug Brownie Disaster

Mixed flour, sugar, cocoa powder and milk in a coffee mug. Stuck it in the microwave for one minute like recipes said. Poked it – still liquid. Gave it another 30 seconds. Smelled burning. Pulled it out looking like volcanic rock. Chucked it straight into the trash. Failure.

Rescue Banana Ice Cream

Grabbed two overripe bananas I nearly threw out yesterday. Peeled, chopped, and froze chunks for 30 minutes. Blended them with a splash of milk until creamy. Added peanut butter because why not. Scraped it into bowls – looked like soft serve. Texture was surprisingly good, tasted like banana with nutty flavor. Kids inhaled it.

What Worked

Best discovery: The berry yogurt needs zero cooking. Just dump and stir. Banana ice cream was shockingly creamy for having no cream. Will make both again when lasagna leftovers hit.

Mug cake? Never again. Might try pre-made cookie dough bites next time when feeling lazy.
