Alright, so today I’m gonna spill the beans on my little kitchen adventure: making tuna noodle casserole, but gluten-free! It was a wild ride, lemme tell ya.

First things first, I grabbed all my ingredients. I’m talking gluten-free pasta (the kind that doesn’t turn to mush, fingers crossed!), canned tuna (packed in water, gotta be healthy-ish), some cream of mushroom soup (gluten-free version, obviously), frozen peas, milk, shredded cheddar cheese, and some crispy fried onions for topping. Oh, and don’t forget the salt and pepper!
Then, I cranked up the stove and got a big pot of water boiling for the pasta. Once it was rolling, I tossed in the gluten-free noodles and set the timer. Gluten-free pasta can be a real pain, so I kept a close eye on it, stirring occasionally to keep it from sticking together. Nobody wants a gluey casserole!
While the pasta was cooking, I started on the sauce. In a large bowl, I dumped in the cream of mushroom soup, added a splash of milk to thin it out a bit, and then flaked in the tuna. I made sure to drain the tuna really well, didn’t want a watery mess. Then I stirred in the frozen peas, salt, and pepper. Just eyeballed the seasoning, you know?
Okay, pasta’s done! I drained it super well and then added it to the bowl with the tuna sauce. Gave it a good mix until everything was coated. It was looking pretty good, if I do say so myself.
Next, I poured the whole shebang into a greased baking dish. Then came the best part: cheese! I sprinkled a generous layer of shredded cheddar all over the top. Gotta have that cheesy goodness!
Finally, I popped the casserole into a preheated oven. I let it bake until the cheese was melted and bubbly and the casserole was heated through. The aroma filling the kitchen was just heavenly.
Once it was golden brown and bubbly, I took it out of the oven and let it cool for a few minutes. Then, I sprinkled those crispy fried onions on top for some added crunch and flavor. And that was it! My gluten-free tuna noodle casserole was ready to devour.

Honestly, it turned out way better than I expected. The gluten-free pasta held up nicely, the sauce was creamy and flavorful, and the cheese and crispy onions were the perfect finishing touch. Even my picky eater gave it a thumbs up! So, yeah, I’d definitely make this again. It’s a comfort food classic, made gluten-free!
