Okay, so we had this HUGE tri tip roast the other day, right? Cooked it up all nice and smoky on the grill, but, man, we had way more than we could eat. Didn’t want to just let it sit there, so I figured I’d mess around with some leftover tri tip recipes. Here’s what I did:

Tri Tip Tacos, Baby!
First things first, tacos. Gotta love tacos. This is how I did it:
- Chopped that tri tip up real fine. Not minced, but like, small bite-sized pieces.
- Heated up a pan with a little bit of oil. Nothing fancy, just vegetable oil.
- Threw in the tri tip and let it get a little crispy around the edges. You know, for that good texture.
- Added some taco seasoning. I just used the store-bought stuff, ain’t got time for homemade today.
- Warmed up some tortillas. I prefer corn, but flour works too, whatever you like.
- Topped ’em off! I went with shredded lettuce, some diced tomatoes, a dollop of sour cream, and a sprinkle of cheese. Boom! Tacos.
Honestly, these were killer. So easy and quick, and a great way to use up the leftover meat.
Tri Tip Sandwiches – Simple and Satisfying
Next up, sandwiches. You can’t go wrong with a good sandwich. This is what I did:
- Sliced the tri tip thin. This time I didn’t chop it, wanted nice, thin slices.
- Got some crusty rolls. Like, those bakery-style ones. Makes a difference.
- Made a quick horseradish mayo. Just mayo and a spoonful of horseradish. Kicks it up a notch.
- Layered the tri tip on the rolls. Nice and generous.
- Topped with the horseradish mayo, some lettuce, and a slice of tomato. Simple, but classic.
These were awesome too. The horseradish mayo really makes the sandwich. Next time I might add some caramelized onions for extra flavor.
Tri Tip Fried Rice – A Little Unexpected
Alright, now for something a little different: fried rice. Sounds weird, I know, but trust me. Here’s how I made it:
- Chopped the tri tip into small cubes. Like, pea-sized.
- Cooked some rice the day before. Day-old rice is key for fried rice.
- Scrambled an egg in a pan. Set it aside.
- Stir-fried some veggies. I used onions, carrots, and peas. Whatever you got in the fridge.
- Added the rice and the tri tip. Stir-fried it all together.
- Poured in some soy sauce and sesame oil. For that classic fried rice flavor.
- Added the scrambled egg back in. Stirred it through.
This was surprisingly good! The smoky flavor of the tri tip worked really well with the fried rice. I might add some sriracha next time for a little heat.
So yeah, that’s how I used up my leftover tri tip. Three different recipes, all super easy and delicious. Definitely worth a try if you find yourself with some leftover tri tip!
