My Messy Kitchen Adventure
Woke up yesterday craving something stupidly chocolatey. Remembered that bomb Red Robin mud pie, but ain’t no way I’m driving over there just for dessert. Figured, how hard could a copycat be? Found a recipe online claiming to be “easy,” laughed nervously, and dove straight in.

Step one: Gathering the stuff. Ransacked my pantry first. Found a sleeve of Oreos – score! Needed some instant coffee granules for that deep flavor. Had to run to the corner store ’cause my milk was sour. Grabbed the biggest tub of vanilla ice cream they had. Coffee granules were near impossible to find, spent like 10 minutes squinting at labels. Got chocolate sauce and caramel stuff too, obviously.
The Crust Chaos
Okay, time to make a mess. Threw like 20 Oreos into a ziploc bag. Whacked ’em with my rolling pin. Smashed ’em up real good, but ended up with some big chunks still. Whatever. Melted a chunk of butter – kinda guessed the amount? Mixed the buttery mess into the cookie crumbs with a fork. Pressed that into a pie pan with my fingers. Tried getting it up the sides but it kept crumbling down. Got frustrated, shoved it in the freezer and slammed the door.
Ice Cream Insanity
Let that crust chill for maybe 15 minutes. Didn’t have much patience. Pulled the ice cream tub out. That stuff was rock solid. Digged at it with a spoon while cussing under my breath. Finally hacked off chunks into a big mixing bowl. Left it sitting out for like 20 minutes to soften up a bit. Stirred it around, added a spoonful of coffee granules. Tried dissolving them first in a drop of hot water – felt like a pro chef move for a second. Mixed it all until it looked kinda like muddy ice cream.
Assembly Line Disaster
Pulled the crust pan out. Spooned half the coffee ice cream sludge into it. Smoothed it out kinda. Then, disaster. Opened the chocolate sauce and it exploded onto my hand. Wiped it on my jeans. Drizzled some sauce over the ice cream layer. Same thing with the caramel – it just globbed out. Tried making a cool pattern, failed miserably. Dropped the rest of the ice cream sludge on top. Almost overflowed the pan. Shoved it back into the freezer. Prayed.
The Long Wait… And Taste Test
Left it in there for a solid 4 hours. Watched dumb videos to kill time. Finally pulled it out. Topped it with whipped cream from a can straight outta the fridge. Made a nice little mountain. Sprinkled leftover cookie crumbs on top because, why not? Sliced a piece. Looked like dog food honestly. But holy hell, that first bite? Chills. Dense coffee chocolate ice cream, the crunchy crust, the sticky sauces? Freaking nailed it! Tasted crazy close to Red Robin. Messy kitchen was totally worth it. Garbage bags full of dirty dishes though. Not looking forward to that.
