Okay, so yesterday I was hit with this massive craving for something sweet, but, you know, trying to be good. Sugar-free, dairy-free – the whole shebang. I thought, “Hey, why not try to whip something up?” That’s how this whole sugar free non dairy desserts thing started.
First, I hit up the internet for some inspo. There were tons of recipes, but a lot of them seemed kinda complicated. I wanted something easy, something I could throw together without spending hours in the kitchen. So, I decided to wing it, kinda combine a few ideas I saw.
I started with the base. I had some ripe avocados sitting around (don’t knock it ’til you try it!), so I figured I could use those for a creamy texture. Then I grabbed some unsweetened cocoa powder – gotta have chocolate, right? I also had some almond milk in the fridge, so that was my dairy-free liquid.
Next up, the sweetener. I’m not a huge fan of artificial sweeteners, so I opted for some dates. I soaked them in hot water for a bit to soften them up, then pitted them. They’re naturally sweet and add a nice, caramel-y flavor.
Okay, so here’s the actual process. I threw the avocado, cocoa powder, almond milk, and dates into my food processor. Then I just let it whir until it was super smooth and creamy. I tasted it, and it needed a little something extra, so I added a pinch of salt and a splash of vanilla extract.
I poured the mixture into some ramekins and stuck them in the fridge to chill for a few hours. I wanted them to firm up a bit before I dug in.
While those were chilling, I decided to make a little topping. I had some unsweetened shredded coconut, so I toasted it in a dry pan until it was golden brown and fragrant. That added a nice bit of crunch and texture.
Finally, the moment of truth! I pulled the desserts out of the fridge, sprinkled them with the toasted coconut, and took a bite. Not gonna lie, it was pretty darn good! It was rich and chocolatey, with a hint of sweetness from the dates. And the avocado made it super creamy and decadent.
Here’s a quick recap of what I used:
- 2 ripe avocados
- 1/4 cup unsweetened cocoa powder
- 1/4 cup almond milk
- 4-5 dates, soaked and pitted
- Pinch of salt
- Splash of vanilla extract
- Unsweetened shredded coconut, toasted (for topping)
And here’s the super simple method:
- Blend everything (except the coconut) in a food processor until smooth.
- Pour into ramekins.
- Chill for a few hours.
- Top with toasted coconut.
Honestly, I was surprised at how easy and delicious this was. It’s definitely going into my regular rotation of guilt-free treats. Next time, I might try adding some peanut butter or maybe some berries for extra flavor. The possibilities are endless!
Would I do it again?
Hell yeah, I’m thinking this could be a new stable dessert in my house for a while.
