Okay, so today I decided to dive into the world of Lazy Dog copycat recipes. I’ve always been a fan of their comfort food, and I figured, why not try making some of it at home? It’s a fun weekend project, right?

The Prep Work
First things first, I needed to figure out which Lazy Dog dishes I wanted to tackle. I hopped online, browsed their menu, and finally settled on their famous Parmesan Crusted Chicken, and for dessert I want to make their butter cake. Sounded like a good mix of challenging and achievable.
Next up, the recipe hunt. I spent a good chunk of time Googling “Lazy Dog Parmesan Crusted Chicken recipe” and “Lazy Dog butter cake recipe”. Found a few different versions, read through the comments (gotta see what other people said!), and picked the ones that seemed the most promising, you know, the ones that didn’t look like they were written by a robot.
Grocery Shopping Time
With my chosen recipes printed out (yes, I’m old school like that), I made a detailed grocery list. One thing I’ve learned is that nothing kills the cooking mood faster than realizing you’re missing a key ingredient halfway through. So, I double, triple-checked that list before heading to the store.
The grocery store trip itself was pretty standard. I grabbed the chicken breasts, a mountain of Parmesan cheese (because, obviously), butter,sugar,flour,eggs and the other usual suspects. I may or may not have also grabbed some snacks… for cooking fuel, of course.
Cooking the chicken
Back home, it was time to get cooking! I started with the Parmesan Crusted Chicken. I followed the recipe I found which involved pounding the chicken thin, the chicken need to be thin like paper, coating it in a mixture of breadcrumbs, Parmesan, and spices, and then pan-frying it. The chicken fried very fast, so I only spent 3 minutes each part.
I pull them out from the pan, and it’s totally golden and crispy, and the cheese is all melted and amazing.
Baking the cake
With the chicken I need to make a simple cake, and then use the simple cake to make the butter cake.

Then, I greased and floured my baking pan, mixed the ingredients and poured the batter in, and popped it into the oven. This part felt a bit more like a science experiment, making sure I didn’t overmix or undermix anything.
After the simple cake is baked, I mixed it with a sweet butter sauce, which contains lots of butter and * smells so good.
The Result!
Finally, it was time to plate everything up and see how I did. And… I gotta say, I was pretty darn pleased with myself! The chicken was crispy on the outside, juicy on the inside, and had that awesome cheesy flavor.
And the butter cake, it’s perfect. The top is crispy while inside is warm and soft.
Honestly, it was a fun (and delicious) way to spend the day. It’s not exactly the same as eating at Lazy Dog, but it’s pretty close, and there’s something satisfying about making it yourself. Plus, now I have leftovers! Definitely adding these recipes to my “make again” list.
