So, how were they?

Honestly? They were okay. Not amazing, not terrible. They definitely tasted like pancakes, but in a cookie form. Very soft, very cakey texture. Not crisp at all, if that’s what you like. More like muffin tops, really. The extra sugar helped, otherwise they would’ve been pretty bland.
Were they quick? Yeah, super quick. Did they use up the mix? Yep. Would I make them again? Eh, maybe if I was really desperate for a quick sweet treat and had mix lying around. But I wouldn’t go out and buy pancake mix just to make these. Regular cookies are better, let’s be real. But it was an experiment, and it kinda worked. Didn’t poison anyone, used up the mix. Success? Ish.
