So I had these gorgeous crab legs in the fridge yesterday. Realized I couldn’t just eat ’em plain – needed something to go with. Grabbed my notebook and started scribbling ideas while staring at the crab.

First try was a disaster
Tossed some rice in the cooker thinking garlic butter rice would work. Big mistake. The crab flavor totally disappeared under all that garlic. Felt like chewing buttered cardboard. Dumped half the batch in the trash.
Went back to basics
Cleaned the kitchen counter and started over. Remembered that lemon brightens seafood. Whisked up a quick lemon aioli dip using mayo, lemon zest, and garlic powder. Dipped a chunk of crab – boom! The tang cut through the richness perfect. Wrote “WINNER” in all caps on my notepad.
Veggie experiments
Chopped asparagus thinking roasted asparagus might work. Tossed them with olive oil and salt. When they came out crispy, I squeezed lemon over top. Tried with crab – the crunch against sweet crab meat? Magic. Did a little dance by the oven.
Found corn cobs in the pantry too. Boiled them fast then slathered with chili-lime butter. Sweet corn + spicy butter + crab juices? My teenager stole three pieces before I could plate properly.
Surprise champion
Almost gave up on potatoes. Then sliced red potatoes thin, roasted until golden. Made dill sour cream dip from scratch – sour cream, fresh dill, salt. Cool potatoes + hot crab? The dill made the crab taste ocean-fresh. Weirdly addictive.
Last-minute save
Noticed green beans wilting in the fridge. Flash-fried them with sesame oil and garlic. Finished with soy sauce and toasted sesame seeds. The nutty crunch made the crab legs feel fancy. Kid asked if we could eat this every Tuesday.
Final five winners:

- Lemon aioli dip – cuts through the richness
- Roasted asparagus – lemony crunch
- Chili-lime corn – butter brings flavors together
- Dill potatoes – cool contrast to hot crab
- Sesame green beans – salty, nutty finish
Biggest lesson? Keep sides simple so the crab stays the star. My sink full of dirty pans proves I earned dinner tonight!
